Recycled veggie tray

Turning the leftover veggie tray into a meal isn't that difficult. In fact, they're clean, peeled, cut up and ready for double duty. So are those ham slices begging for another chance. Enter quinoa, the highly nutritious South American grain that cooks in a flash. And in less time than it takes to drive through a nasty fast food line, you've got an amazing stir fry.

No recipe needed. My tray included broccoli, grape tomatoes, celery, carrots. Just prepare the quinoa as directed, heat a drizzle of olive oil in a pan over medium high heat, cook the veggies until softly crisp (still brightly colored), toss in the chopped ham until heated. Eat well.
