Quinoa to the rescue

Nothing like a hungry Fri morning with an empty fridge. Time to hit the reserves! Always on hand - dried cereal, fruits and nuts. (Unless I'm out of those too:) Today's rescue mission included all three. Quinoa flakes, dried cherries and pecans with a sprinkling of flaxseed. Quinoa flakes cook quickly, as in 90 seconds after boil. High in protein, fiber, and iron, gluten-free. Flaxseed meal adds a hit of omega-3, iron, lignans (natural antioxidants), and protein. More iron, calcium, and antioxidants from the pecans and cherries.

Healthy, yes, but mostly a fabulous way to fuel for a busy day!
