Hummus Pizza
I keep a stack of frozen pizza crusts for those fast food nights. Around here, that means food prepped fast, not the drive through thing. Sometimes it means a fridge and pantry raid with a strange combination of ingredients. Isn't that the fun part of cooking?
Frozen pizza crusts are available at your local Italian markets (I get mine at Viviano's on the Hill in StL)
This was a raid night pizza. Healthy, quick, and yummy. Hummus pizza with mushrooms, olives, sunflower seeds, and ricotta cheese. All ingredient amounts are estimates and based on whatever's left in the container.
1 frozen pizza crust 1/3 cup prepared hummus 1/2 cup portobello mushrooms, chopped 1/4 cup olives, any variety 1/4 cup sunflower seeds 4 oz ricotta cheese (Hautly of course) parsley, crushed red pepper to taste Spread the hummus on the thawed pizza crust with a spatula. (Often I don't take the time to thaw the crust and it still bakes fine.) Layer the remaining ingredients, finishing with small dollops of ricotta. Bake at 400 degrees for 10 minutes, or follow the crust baking directions.
