Spelt Pasta Primavera

Tried this organic spelt penne pasta (found at many retailers). Spelt is an ancient grain that has recently made a resurgence in the health food world due to it's nutty flavor and generous supply of manganese, niacin, magnesium, protein and fiber. Perhaps because the husk is tougher, it contains more nutrients than the cross-bred wheat we see in most products today. It contains two ingredients-organic spelt flour and water. A pretty simple pasta recipe for a simple summer dish. Note: For those of you looking for gluten free alternatives, this is NOT a gluten free grain. (Since's it's part of the wheat family, it still contains gluten, although in smaller amounts.)

A two ounce serving contains 9 grams of protein, 210 calories, and 8% of daily iron recommendations. I simply sauteed onions, red peppers, zucchini, and chopped tomatoes (the end of my farmshare veggies this week), tossed with a bit of olive oil, shredded asiago, and thinly sliced fresh garden basil.

Fast. Fresh. Healthy.
