Chicken Cabbage Salad

This quick, healthy slaw recipe can be served as a main course or side salad. It's packed with protein, oleic acid, Vitamins B3, K, C, E, folate, selenium, and a handful of other vitamins and minerals. Tip: Roast an extra chicken breast for mid-week meals like this.

1 c green (or Savoy) cabbage

1/4 c red cabbage

1/2 c chopped chicken

2  tbsp pine nuts

shaved aged provolone

Drizzle olive oil and balsamic vinegar

Fresh ground pepper to taste
